Shrimp Cocktail


Package of Frozen Shrimp

I buy “Uncooked” “E-Z Peeled”  “Deveined”  21/25 shrimp per pound

(usually sold in one pound packages)

1 Tablespoon of Kosher salt

1 cup of ketchup

1/4 cup of horseradish  (buy kind that is sold refrigerated)

1 wedge of lime

Cooking Shrimp

defrost shrimp according to instructions on package

remove shells from shrimp

bring a large pot of water to a boil and add kosher salt

place defrosted shrimp in the boiling pot of water and stir once to move shrimp around

cook for only 2 minutes.   Shrimp should have turned pink in color.

remove shrimp from pot and place in a colander and rinse with cold water for a minute

place shrimp on paper towels and let cool for 15-30 minutes and then refrigerate

Cocktail Sauce

The proportions are 1 part horseradish to 4 parts ketchup and a generous squeeze of fresh lime

place ketchup and horseradish in a bowl and squeeze in a little juice from fresh lime

mixed and then refrigerate until cocktail is chilled
