Mom’s Chili



4  Tablespoons olive oil

1  onion, chopped

4  stalks of celery, chopped

2  carrots, diced

3/4  cup frozen corn

3/4  cup frozen green beans, cut into small pieces

1  double size can of tomatoes (packed in tomato juice)

1  small can diced green chilies

1  can kidney beans, rinsed

1  can black beans, rinsed

1  package chili seasoning mix

You can add other ingredients like zucchini, mushrooms, ground beef


In large sauce pan, heat  4 Tablespoons of olive oil

In pan, add onions, celery, and carrots.  Sauté until onions are translucent.

Add all the can products, frozen vegetables, and chili seasoning mix

Stir together and bring to a boil

Then lower heat to very lowest fire, cover pan, and let simmer for a hour or so

Let it rest in the refrigerator over night

Reheat and serve.
