Three videos on pasta

What caught my eye about these videos is the method they use to cook the pasta: so different from the one I know. The pasta goes in the water, then you start cooking the sauce (from scratch, woot!) in a separate pan. Before the pasta is completely cooked you add it to the sauce to finish cooking.

Ming Tsai, who I spotted on week one of Top Chef, is a big Boston restaurateur and also has a PBS cooking show.

And these two guys are Brad Spence and Jeff Michaud, who you might not know, but I discovered them through my culinary hero, Marc Vetri.
